I have been absolutely loving this summer salad recipe recently. I eat it just about every day for lunch. What I love most about this salad, besides the amazing taste, is that I can get a couple ingredients right out of my garden. There is nothing better than fresh veggies in a summer salad. But, if you don’t have a garden, you can certainly pick all of these ingredients up at your nearest grocery store and it will still taste amazing! I really hope you enjoy!
- Spinach (from garden)
- Yellow Bell Pepper
- Cucumber (from garden)
- Matchstick Carrots
- Feta Cheese (I use reduced fat)
- Sunflower Seeds
- Honey Roasted Slivered Almonds
- Dried Cranberries
- Balsamic Vinegar
- Olive Oil
- Place spinach, cut up bell pepper, cut up cucumber, carrots, feta cheese, sunflower seeds, slivered almonds, and dried cranberries into a bowl.
- Drizzle a small amount of olive oil, honey, and balsamic vinegar on top of salad and toss.
